I’m a busy mom just like you, so I love easy and quick
recipes! I need to warn you! My recipes don’t have exact measurements and
all that stuff, so feel free to edit and make it how you like it! I just love sharing with other mom’s how to
make life easy.
Ok, so start with thawing out your chicken. I like to take my chicken out overnight, then
throw it in the fridge until I come home from work.
-
Preheat your oven to 350 degrees
-
Set your chicken thighs in a baking pan with the SKIN
FACING DOWN (I usually cook 10- 12 pieces at a time so I have leftovers). Make
life easy girly!!!
-
Cut up one medium size onion- chop it up any way you
like it! Place your onions on top of
your chicken
-
Sprinkle your seasonings on your chicken
-
Pour olive oil over your chicken- not too much! I usually use about 3 tablespoons of olive
oil
-
Pour about a ¼ cup of water in the pan (not too
much) You really don’t want your chicken
to not taste boiled. You want it to cook
in it’s own juices!
-
Now put foil over your chicken an cook on 350 degrees
for about 60-90 minutes. Just pierce
inside of a piece of chicken with your fork to make sure ALL THE RED is
out! Yuck!
-
Once your chicken is done, pour MOST of the broth
out. Leave a little bit in the bottom of
the pan- just a smidgen! (You can freeze all that extra broth for chicken soup
in the future!)
-
Now here’s the fun part!!! Get two forks and start pulling the chicken
apart while it’s hot. Just keep pulling
until most of it is on the bone.
-
Now, pour about half cup of BBQ sauce over your
chicken! I like mine with a kick, so I
use a lot of Sweet Baby Ray’s Sweet/Spicy BBQ Sauce and a little of the regular
flavored sauce! Mix the chicken and the
BBQ Sauce until it’s evenly spread!
-
Now, place it in the oven UNCOVERED for about 15
minutes.
-
BAM- now it’s ready!
This is so easy! I
like to make this with corn on the cob or broccoli for my family! Remember to take time to eat together!!! Love yins!
